What You Will Learn & Make
- Milk to Curd: Understand milk selection, culturing, and the magic of enzyme coagulation.
- Hands-On Curd Cutting: Learn the tactile art of slicing, cooking, and stirring the curd to achieve the perfect moisture balance.
- Pressing & Molding: Form and salt your freshly crafted cheese into take-home molds.
- Home Aging Guide: Tips and troubleshooting for continuing your cheesemaking journey in your home kitchen.
Note: All milk, vegetarian rennet, cheesecloth, sanitization supplies, and cheese forms are provided. Aprons recommended!
Passing on the Craft
The Ontario Cheesemaking Workshops are dedicated to preserving heritage dairy arts and promoting sustainable, farmstead cheesemaking. Our instructors have trained under international master fromagers and operate micro-dairies producing gold-medal sheep, goat, and cow milk specialties across Ontario.
